When I amplify some of the track volume, the volume will pretty much go bottom to top on the track height. It does not show any warning or indications of a problem. I searched the user manual and cannot find a picture of the ideal volume level. Is there some place I can see what would be best for it to look on the track?

Rather than just relying on what the waveform looks like in the main window, open the Playback Controller window (Menubar: Window > Playback Controller) which will let you see the actual volume levels coming from both channels in real time.
Playback volume needs to be kept below 0 to avoid clipping.
Other than that, suitable max and minimum playback levels become something of a case by case choice.
But any collection of recordings that form a greater whole will probably need to be kept consistent with each other and not have wildly differing overall volume levels.
Chapters 5 & 6 in the manual also has more advice on Recording and Editing.
